The History and Production of Chocolate

By John Jarmola Cocoa powder and the many different types of chocolate are all derived from cocoa beans, the seeds of the fruit of the cacao tree. These small trees are native to the tropical America but are extensively cultivated elsewhere in the tropics. The tree begins to bear fruit when it is 4-5 years old. The small pink flowers and succeeding fruit pods grow directly from the trunk and main branches. On average a full grown tree may produce 6000 flowers, only twenty of which will become pods. A pod weighs about 1 pound (450g), and contains 20-40 seeds, or cocoa beans, which resemble plump almonds and are covered with a sweet white pulp. An ordinary bean has a dark brown or purple flesh, with a bitter, astringent and nutty taste. The Mayas and Aztecs of Central America, or what is known as Mexico, were the first know drinkers of chocolate. In 1519 the Spanish explorer Cortes discovered the beverage and introduced it to the Spanish court, after observing the Aztec Emperor, Montezuma consuming it. The drinking chocolate was made by drying the cocoa beans and roasting them over a fire. Water was then added and the beans pounded to a paste, often spices, nuts and powdered flowers were added. The chocolate making process is somewhat long and involved. When the cocoa beans (seeds) have been scooped from the pods, they are piled onto leaves, covered with more leaves and left for several days. The sugary pulp surrounding the beans begins to ferment. After fermentation the wet beans are dried, on mats, wooden platforms or in drying equipment. After drying, the beans are packed into bags ready for transportation to the next stage. At the factory the beans are sorted, cleaned and roasted for an hour in rotating drums at 275F (135C). The roasted beans are then kibbled, a process in which they pass between rolls of serrated cones placed at such a distance apart that the beans are cracked rather than crushed. The cracked shell is carried away by an air-blast(a process called winnowing). The broken beans or nibs are then ground between steel rollers. Because the cocoa beans are 50% fat (cocoa butter) and the grinding process generates heat, the crisp nutty cocoa nibs emerge as thick brown liquid. When cooled this solidifies to a hard block of unsweetened chocolate known as a mass. This is the basis of all chocolate products. Cocoa is made by extracting 70-80% of the butter. The hard dry cake which remains is then ground, reground and sieved. To make plain chocolate, extra cocoa butter and powdered sugar are added to the “mass”. Milk chocolate has sweetened full cream milk added which has been condensed into a rich creamy liquid. At these stages the chocolate has a rough texture. After being ground and mixed the liquid chocolate is further ground (Conched) with heavy rollers to produce a smooth velvety texture. What Makes You Think You Can Reclaim Bank Charges?

By Mark Bateman You have not bothered to manage your account properly. You have borrowed money offered to you by your bank, and then not made sure you have left enough funds to pay for your direct debits or cheques. You havent even managed to put aside money to cover those bank charges. What makes you think you are entitled to any kind of refund and that you can reclaim your bank charges? It is your account and your responsibility, so why blame someone or something else? Well to a certain extent it is your fault, it is your account and you spend the money available, just like we all do. That is the point, just like we all do. Years ago you would find it very difficult for your bank to let you spend more than you had and would have to jump through hoops to borrow even the smallest amount. These days it is openly encouraged; we all have offers landing on our doorstep which seem attractive but can have dire consequences. However, the level at which banks charge when it all goes wrong seems very unfair and there is an important point: English law does not allow a penalty clause. If a bank cannot justify that it costs 25 - 40 to send you an automated letter advising you of an unauthorized overdraft then the fee is considered a penalty. Excessive fees for overdrafts, returned cheques, unpaid direct debits and standing orders are all potentially unlawful. What can you do? Well you can claim those bank charges back for free. You can get a list of charges from your bank. Interest can be added to those charges and you can write a standard letter to your bank asking for a refund. If you are lucky they will send you a cheque, but in most cases they will refuse. A second letter will then be sent informing them that they have so many days to refund or you will pursue the matter in the small claims court. Again they may refuse, but at the end of the day if it does go to court you are unlikely not to receive a refund. The bank has to prove that the charges were not penalties. At any of these stages before a court hearing there may be an offer which you may need to negotiate. If you really dont want to get your hands dirty with this, or simply dont have the time then there are companies out there that will do this for you at a no win no fee commission. This commission is usually 25% of the won claim value. The fee also includes court costs. However, in most cases these claims do not go to court so that level of fee has to be considered carefully. Shop around and you will find the odd company that does offer a simple low fixed fee on a no win no fee basis. The benefits are you only pay for the stage at which you win your claim, and as the company does not automatically factor in court costs it may take more care to maintain the relationship between you and your bank in order not to get to that stage. Whatever choice you make do it soon as the OFT (Office of Fair Trading) are rumoured to be soon setting an acceptable level of charges for the banks. If that is the case the banks are extremely likely to limit payouts that are in excess of the new set charge. So if 12 is the ruling then it will have a massive impact on claims. Good luck! How You Can Help Children with Color Vision Deficiency

This is because the condition is carried through the mother on the X chromosome (females are XX). A woman who passes the gene on to her children will usually have normal vision. When she has children either her affected X chromosome or her normal X chromosome will be passed on. So, there is only a 50/50 chance the sons of carriers will inherit some form of color vision deficiency. Since males are XY, and the Y chromosome from the boy’s father is not involved in passing on the condition, boys are affected much more than girls. For a girl to inherit colorblindness she must have two affected X chromosomes, one of which will have been passed on by her carrier mother and the other by her father who will have a color deficiency. A mother with color vision deficiency will pass on the condition to all her sons. The affected X chromosome alters the cone-like nerve cells in the retina at the back of the eye, which enable us to see colors by day and also to discriminate fine detail. Many parents unfamiliar with colorblindness, fear that their child has, as the term implies, a confusion in identifying very strong colors across the whole range of main colors. This is not the case, however. Two-thirds of children with Color Vision Deficiency will not be severely affected. The chemical within their red and green cones is subject to slight alteration only which causes these children to misidentify pale colors in the main. Strong colors become more of a problem under poor lighting conditions, when they become tired and if they have to name colors under pressure. Typical of this group of children is the misnaming of pale pink and light green as white, and giving alternative names to secondary shades. The remaining third of children will have the more severe form where one of the three (red, green and blue) chemicals found in the cone nerve cells is missing.
